Some people have already torn all the Resident Evil 4 demo discs apart. "The Horror Is Alive" had an article comparing them:
The Horror Is Alive
Four files were discovered in the Biohazard 4 Trial Edition (only accessible through debug options), and I've never seen anybody try to hack the game to access the rest. I did it myself a while back, and decided to post them here. These are translated with an app... so pretty rough, but the idea is clear. At least a couple are pretty interesting, like one that discusses how a person could turn into El Gigante. Another talks about how villagers should not be seen outside the village at night, because of their red eyes.
I'm starting at File 05, because the first four are translated more accurately in the article I linked. Unfortunately, I could not find any way to access files beyond the village section. I had reason to believe they were not present on the demo disc, and thus would not be possible to obtain... but it may be worth taking another look at some point. If somebody wants to take a better crack at translating these, be my guest:
File 05
“青コイン”を撃て
15個の青コイン...農場に7個…墓地に8個...
10個以上壊せた者に...特別な...を与える
